These mammoth Blond olives are huge, averaging around 3cm in length and 2cm in thickness, they are a real treat because of their meaty texture and size. The olives come from the Gaidouroelia variety and are a very traditional olive grown in and around Greece, although called blond they are more green-brown in colour.
These olives are picked in November but are not actually ready until February because they are cured using the traditional brine method as opposed to the quick method of using lye which is often the case with larger olives. The olives are firm and crunchy to bite with a natural zingy flavour.
