Figgy Ice-Cream

  • 1.5 glasses of almond milk
  • 75g Raw Cashews
  • 2 tbsp sweetener of your choice (raw honey or 4 pitted dates)
  • 6 fresh ripe figs peeled*

Make cashew cream by blending the cashews, half of the sweetener of your choice and half a glass of almond milk until smooth and set it aside.

In a blender put the peeled figs, 1 glass of almond milk and the other half of the sweetener.  Once the figs have fully pureed add the cashew cream and briefly mix until the mixture is well blended.

Switch on the ice-cream maker and pour the mixture into the cooling bowl.  Let it freeze in the ice-cream maker for approximately 30-40 minutes.

Serve straight away or store in an airtight container in the freezer and remove 30 minutes before serving. 

Alternatively if you do not have an ice-cream maker you can put the mixture directly from the blender into an airtight container and place in the freezer, mix it up every half an hour to prevent it crystallising.  Do this 4-5 times, again remove from the freezer half an hour before serving.

*Any soft fruit can be used instead of figs with delicious results.  You can replace figs with apricots, 2 large peaches, bananas or nectarines, or 200g of strawberries, cherries or any other berries.
