Put the dessicated coconut into the food processor and process until broken down and the coconut starts to release its natural oils. Add the seeds, nuts, vanilla and cocoa/carob and process until the nuts are broken down well. Add the dates and process again until the dates have broken down into the mix.
Put the cashew nuts into the food processor and pulse to break down the cashews into small pieces so they are visible and lend a nice crunch to your cookies.
Finally add your sweetener of choice to the food processor and process until the dough starts sticking and forming a ball.
Take a tablespoon or so of the mixture and roll into a ball, flatten the ball to about 2cm thickness and place onto a dehydrator tray. Do this for the remainder of the dough.
Dehydrate the cookies at 105 degrees for 12 or so hours until crunchy on the outside but soft on the inside.
Alternatively you can freeze the cookies and serve them as freezer cookies.
