Banana Chia Pudding

Banana Chia Pudding
  • 1 large banana
  • Half a glass of nut milk: blend 2 tbsp of any nut or seed with 100ml of water
  • 3 tbsp chia seeds
  • 3 dried figs
  • 2 tbsp roughly crushed pistachios
  • 1/2 tsp vanilla powder

Blend the banana and nut milk until smooth and creamy, pour into a bowl and mix with the chia seeds and vanilla powder.  Leave the bowl to the side for 10 minutes to let the chia seeds expand stirring occasionally.  In the meantime shell the pistachios and lightly crush and slice the dried figs into strips. When the chia pudding is ready sprinkle the pistachios into the middle and arrange the dried fig pieces into a pattern of your choice.
