Chia seeds (Salvia hispanica) are causing a stir in the health food world. Also known as Salba seeds Chia is of the most powerful, functional and nutritious foods in the world.

Chia seeds are the highest plant source of Omega-3 known to man, they are an excellent source of fiber and are loaded with antioxidants.
They are also a great source of protein, containing all the essential amino acids making it a complete protein. On top of that Chia is an excellent source of calcium containing 5 times more than milk.
When the seed is exposed to liquid the soluble fibre on the outside of the seed-shell is activated absorbing about 10-14 times their weight in water and creating a gel like consistency which cleanses the intestines by bringing and transporting debris from the intestinal walls so that it can be eliminated efficiently and regularly.
As if that isn’t enough chia seeds also contain huge amounts of magnesium and iron.
Due to their very mild flavor, chia seeds can be added to just about any food without changing the taste at all. 1 tablespoon of chia seeds a day is enough to give you lasting energy and a boost of vitamins, minerals, protein and fibre. The anti-oxidants in 1 tbsp will give you more anti-oxidants than blueberries plus keep you feeling fuller for longer so you're not tempted to over-eat and snack.
My favourite way to eat chia seeds is to add a tbsp of seeds to a cup of almond milk, let it stand for half to thicken which I then add dry fruit, chopped nuts and cinnamon to create a delicious breakfast or pudding.
