Unsalted Manaki olives are cured without salt. From the moment these olives are picked from the tree they are placed in plain water and left to naturally release their bitter taste. After some time and many changes of water these olives are then ready to eat.
Manaki olives are greenish brown in colour and are the olives usually used to make vinegar therefore these olives naturally have a sour vinegar like taste.
Manaki olives are packaged in a little extra virgin olive oil from the same olives for preservation reasons.
